Supper-time Salads

Like the next person, I’m just not particularly fond of salad for dinner.  “Take your salad and your croutons and go elsewhere,” I used to say. That’s until I “met” a few salads that pack a dinner-time punch. I’m on a crusade to find the tastiest, most filling, fiber-ful, flavorful, healthiest salad out there, and then, dear readers, I’ll share my research with you.

First up, my favorite recipe-site for the healthy, Eatingwell.com is always a great place to start. Look what I found!

The Eating Well Cobb Salad. It’s got everything you might  want, (vivid flavors and bacon!),  and nothing you don’t (thick, fatty, gloppy dressing). It’s ready to eat in under 40 minutes, and it’s a dinner SALAD. You heard me right. It’s a hearty, packs a punch, tummy-filling salad. Don’t take my word for it – go after it on your own! (You do know it has BACON right?)

    I have a salad or two every day. I don’t eat wheat, and find that substituting spinach for what might’ve been a starch (bread, pasta, potatoes) is equally satisfying. Here’s my current favorite:

    2 cups of spinach (plated). Add fresh tomatoes and sunflower seeds.

    Grill mushrooms + chopped red peppers (or other veggies) in foil with 1 tablespoon homemade sesame ginger dressing for 10 minutes.

    Grill 4oz of filet mignon for 5 minutes each side (med rare).

    Remove veggies and steak from grill.

    Drizzle marinade on spinach to wilt.

    Garnish with veggies and top with steak.

    It looks like the photo in the post – unless you toast it a little too much, then it looks much much darker green. 🙂
