Tasty Tuesday: Scrumptious Sweet Potatoes

All hail the sweet potato. Tasty, nutritious, convenient and easily enjoyed.  Baked sweet potatoes are the ultimate fast food. Don’t believe me? Try it. Grab one (aim for organic, usually available for under a dollar), carry in your bag to work. At lunchtime, spear it with a fork about 10 times. Place in microwave and heat for 5-7 minutes and voila, a steaming baked sweet potato. Jazz it up with some canned salsa, or some homemade chili and you’ve got a tasty mid-day masterpiece.

Not in the mood for microwaves? Then check this out: sweet potato chips. Yup, grab an organic sweet potato (again, <$1), tote it with you to work. Thinly slice it up, drizzle with olive oil (or not), dust with cayenne (or not), and spread the slices on your toaster oven’s baking sheet. Bake at 350 until they are crispy (usually 10-20 minutes, depending on the oven).

They are filled with flavor, fiber, and you’ll amaze or inspire your co-workers with your ingenuity and dedication to clean eating.
